Tiivistelmä Tässä tutkimuksessa on tarkasteltu elintarvikkeiden hinnanmuodostusta maito-, liha-, ja viljatuotteiden osalta vuosina 2008, 2012 ja 2016. Kuluttajan tuotteesta maksama hinta on jaettu verojen, kaupan, teollisuuden ja alkutuotannon osuuksiin. Osuuksia esitellään yksittäisistä tuotteista koostuvien tuoteryhmien tasolla, tuoteryhmistä koostuvien päätuoteryhmien tasolla, sekä koko sektorin tasolla. Ruuan hintakehityksestä ja elintarvikesektorin rahavirtojen muutoksista johtuen euromääräisiä marginaaleja on tarkasteltava samanaikaisesti suhteellisten marginaalien kanssa. Teollisuus on pystynyt pitämään euromääräisen osuutensa melko tasaisena, vaikka ruuan hinta on laskenut vuosien 2012 ja 2016 välillä. Kaupan euromääräiset marginaalit ovat pienentyneet. Teollisuuden suhteellinen osuus on puolestaan kasvanut samalla aikavälillä merkittävästi ja kaupan osuus pienentynyt selvästi. Veron osuus on kasvanut hieman. Alkutuotannon osuus on pääsääntöisesti pienentynyt, mutta tuoteryhmien välillä on tässä eroja.

Abstract: This study examines the changes in price structures of the Finnish dairy, meat and grain sector in 2008, 2012 and 2016 respectively. Product-based price margin calculations measure the share of a consumer price dispersed into each sub-sector of the supply chain: to farmers, processors, wholesalers/retailers as well as to government taxes. Food price fluctuations and changes in money flows of the food industry create a basis for interpretation of the results. The price margins given in euros and the price margins given in relative terms must be studied simultaneously. The processing industry has been able to hold its own share (in euros) quite stable even though the price of food has decreased between the years 2012 and 2016. Instead, the euro-measured share of the retail sector has declined. When it comes to relative shares, the industry has increased its share notably whereas the retail sector has lost its dominance in the supply chain.
