Tiivistelmä: Tutkimuksessa selvitetään elintarvikkeiden ja ravintolapalveluiden herkkyyttä hintojen ja tulojen muutoksille. Tarkastelu tapahtuu kysyntäsysteemikehikossa, jossa kansantalouden tilinpitoaineiston yksityinen kulutusmeno on jaettu viiden hyödykkeen ryhmitykseksi. Niistä kaksi ovat elintarvikkeet ja ravintolapalvelut. Kysyntäjoustojen laskentaan käytettävä aineisto koostuu vuosien 1975-2004 tiedoista. Kysyntäsysteemiksi valikoituu dynaaminen AIDS-kysyntäsysteemi (Almost Ideal Demand System). Elintarvikkeiden kysyntä osoittautuu joustamattomaksi. Sen hintajoustoksi saadaan –0,36 ja menojoustoksi 0,78. Ravintolapalveluiden kysyntä on joustavampaa. Sen hintajousto on –0,84 ja menojousto on 1,30.

Abstract: This study is concerned with the estimation of demand elasticities for food consumed at home and for restaurant services. The data used in the study was colleted from the National Accounts time series over the period 1975-2004. The analysis of the demand elasticities takes place in a demand system context in which the private consumption is composed of five commodities including food consumed at home and food consumed away from home. A dynamic demand system called AIDS (almost ideal demand system) was employed. According to the results, food consumed at home was inelastic measured by both expenditure elasticity (0.78) and price elasticity (-0.36). Restaurant services were more elastic as its expenditure elasticity was 1.30 and price elasticity was –0.84.
